Pinto Beans

It’s not often that I brag about my cooking but this a good bean recipe that I came  up with.  Hope you enjoy!

1 small package beans
1 package picsweet onion, celery, and bell pepper
6 bacon slices
1/2 tsp. garlic salt
1/2 tsp. salt
1 (48oz) chicken broth
Directions:
Rinse the beans and soak for several hours
In a large pan fry the bacon till tender but not crispy.
Add the Picsweet to the bacon grease and lightly sauté.
Add the broth, beans and salt
Bring to a boil, reduce heat, cover and cook on low till beans are tender

Mexican Cornbread

1 pkg. Shawnee white cornbread
1 egg
1/3 cup milk
2/3 cup cream corn
2 green onions
4 slices (Picked jalepenos rings)
2 bacon slices
Directions:
Cook the bacon till crispy, remove and lightly saute the onion and jalepenos.
Mix well the egg, milk, and cream corn and add to the cornbread
stir in the sugar, and sauted onion, jalepenos and crumbled bacon
Bake at 400 till done.
